Oleoresin obtained from ginger is a kind of volatile oil which is derived in the course of solvent distillation method by percolating powered rhizomes of ginger. Scientifically, ginger is known as Zingiber officinale which belongs to Zingiberaceae family of Zingiberales order. Ginger oleoresin has distinctive smell of ginger and constitutes 1%- 2% of volatile oil along with 5% - 8% of pungent acrid oleoresin and starch.

History:
Generally, Ginger oleoresin is known as Jengibre, Zanjabil or Chiang. Volatile oil of oleoresin is dark brown in color; it emits fresh garlic like aroma and is soluble in water and in oils. Ginger oleoresin has hot and pungent flavor and is ensured by uniform emulsification
